Lemon Water
Breakfast - egg, sauteed mushrooms topped with feta and basil, roasted sweet potatoes, avocado with Jane's mixed-up salt and red pepper flakes, tomatoes
Lunch - leftover Mongolian bbq, avocado, sf carnation with milk
Dinner 1. sweet potato pancakes, dave's breakfast with yogurt, chia, pear, hemp, peanut butter, and this new Daily Boost trail mix that's super good
Dinner 2. Gyudon (sugary so I didn't eat much) - rice, thin sliced beef, onions, soy-sugar-ginger sauce; clementines

April 3 - Six Weeks

It was my goal to have no sugar or flour for six weeks.  I did it!  Results: I've lost some weight, I have more energy, my knee, hip, and IT band have felt way less pain than before.  All good things!  I'll allow myself an occasional bit of sugar or flour now.


Lemon water
Breakfast - sweet potato pancakes, oatmeal, bananas, dried blueberries, peanut butter
Bike ride to library and back
Protein shake with bananas and almonds
Lunch - Roasted veggies, turkey burgers, tomatoes, bell pepper, milk; yogurt mixed with chia jam
Dinner - mashed potatoes with marina sauce and meatball.  This was weird.  I won't do it again.  I'll do a different pasta substitute next time it's Italian night.  Slice of ham, green beans, bell pepper, tomatoes, milk.
Snack - strawberries, raspberries, nuts


Breakfast - sweet potato pancakes, oatmeal, fruit, PB

After-workout protein shake with banana and almonds

Lunch - Turkey burgers, roasted veggies, raw tomatoes and bell pepper

More lunch - yogurt mixed with chia jam

March 31 - General Conference!

Lemon Water
Breakfast - Egg scramble with bell pepper, chicken sausage, onion, cheese, tomatoes
Lunch - pan-fried salmon, roasted cauliflower, zoodle salad with bell pepper and chicken sausage, avocado, tomatoes.  So delish while watching General Conference.
Dinner - turkey burgers, egg, roasted caulifower and brussels, greens, baked sweet potato

Lemon Water
Breakfast - peanut butter and strawberry chia "Jam" on toast.  I mashed strawberries and mixed them with chia seeds and a little water to make me a jar of jam.
Lunch - Another breakfast. :)   Sweet potato pancakes, roasted potatoes, greek yogurt, strawberries
Dinner - turkey burger with ezekiel bread bun, lettuce, tomato, onion; roasted and fresh veggies

Breakfast - peanut butter and chia jam toast

Lunch - sweet potato pancakes, roasted potatoes, yogurt, granola, strawberries

Dinner - turkey burger on an ezekiel bread bun, roasted veggies, bell pepper

Lemon Water

Breakfast - Scrambled Eggs with cheese, toast, avocado, bell pepper

Lunch - chicken, roasted carrot and cauliflower (with turmeric), spinach, bell peppers, yogurt, granola, strawberries (on sale - yay!).

Snack - sugarfree chocolate almonds from my sweetest visiting teaching partner.  The wrapped ones (Dove chocolate) will be Easter treats for the kids.

Dinner - chicken, asparagus, potatoes, tomatoes, garlic; strawberries on the side

Day 21 Fancy beets

March 12

Breakfast - yogurt nut bowl with apples and bananas, peanut butter, chia, hempseed, stevia
Lunch - boiled egg, grapefruit picked today, sweet potatoes,brussels sprouts, red onion, fancy beet salad with bleu cheese (recipe below)
Dinner - n N Out cheeseburger protein style minus the sauce, diet coke.  Not bad without the bun, though I noticed the burger was really salty.  ???  
Came home and ate roasted cauliflower, roasted broccoli, and quinoa, 3 clementines

In N Out cheeseburger protein style minus the sauce, diet coke

Spiralized Beet and Blue Cheese Salad

Ingredients
2-3 large beets (about 2 pounds), peeled and spiralized using a 3mm blade
1 bunch green onion, thinly sliced into rounds
6 ounces firm blue cheese, crumbled, or more to taste
1/4 cup chopped fresh dill, or to taste
1/4 cup red wine vinegar
2 tablespoons lemon juice
1 clove garlic, pushed through a garlic press
1/3 cup neutral oil, such as grapeseed
salt and freshly ground black pepper to taste

Directions
Preheat oven to 350 degrees F (180 degrees C). Line a rimmed baking sheet with aluminum foil.
Spread spiralized beets out in a single layer on the prepared baking sheet.
Pour 1 to 2 tablespoons water over the top and then tightly cover the baking sheet with another sheet of aluminum foil.
Roast beets in the preheated oven until tender, 20 to 30 minutes. Remove from oven, drain any accumulated liquid, and cool completely.
Combine cooled beet noodles, green onion, blue cheese, and dill in a large bowl.
Whisk red wine vinegar, lemon juice, and garlic, together in a small bowl.
Slowly whisk oil into dressing until smooth and creamy. Season with salt and black pepper to taste.
Pour dressing over beets and toss salad to coat.

8:30 oat groats, milk, berries, stevia

Walk around the neighborhood with Mom

12:45 Lunch - chili lime chicken, roasted potatoes, butternut squash, brussels sprouts, tomatoes, grapes

6:30 Dinner - hamburger vegetable soup (my favorite soup - recipe below); caprese salad - fresh mozzarella, tomatoes, fresh basil, salt, pepper, balsamic glaze;  milk

I had a few clementines sprinkled throughout the day... They're so good right now.







Hamburger Vegetable Soup
(Mom Anderson)

1/2 pound ground hamburger or turkey (I always use turkey)
Brown, drain, set aside

2 Carrots
3 Celery stalks
2 large Potatoes
2 small Onions
2 small Zucchini (I usually use one plus a yellow squash)
4 cups water, 4 tsp beef or chicken bouillon
Salt, Pepper, Italian seasoning (about 2 tsp is probably good), Garlic powder

Bring veg, bouillon, & seasonings to a boil, reduce heat, cover, simmer for 15 min.

Add:
hamburger or turkey,
1 small Napa cabbage
Large can (2 regular cans) crushed or diced tomatoes
2 cans of beans with hamburger & cabbage -- pinto, black, kidney, etc.


Bring to boil, simmer for 5-10 min until tender

5:45 lemon water
7:00 scrambled eggs, 1/3 Ezekiel English muffin toast with greek yogurt, fresh blueberries, and peanut butter

9:00 cutie, 1/2 apple

12:45 spaghetti squash, spinach, roasted carrots and brussells, avocado, hard boiled egg, tomatoes.  Grapes and dates for dessert!

7:45 Brown rice & quinoa topped with Madras lentils, , roasted sweet potatoes, Caprese Salad - fresh mozzarella, tomatoes, basil, balsamic glaze, salt & pepper.  Milk. Handful of blueberries for dessert.

Breakfast - eggs and toast with yogurt, berries, and peanut butter

Lunch - spaghetti squash, veggies, avocado, egg
Dinner - rice & quinoa with madras lentils, caprese salad, sweet potatoes

Day 7 Mexican Monday

February 26
6:15 lemon water with turmeric
6:45 oat groats with milk, berries, stevia; grapefruit juice

10:45 1/3 Ezekiel English muffin avocado toast, 1/2 apple
I was wondering why I was so hungry since it wasn't nearly lunchtime, but looking at this now I see it's because I hadn't eaten in 4 hours!

Long walk to the farm to feed the goats and chickens.  Yay baby goats and teenage chicks!

12:15 string cheese, raw mushrooms, cherry tomatoes (This snack is aka 'grab whatever you see in the front of the fridge as you run out the door to the Jr. High')

3:00 brown rice, madras lentils, roasted asparagus, mushrooms, tomatoes, milk
I consciously chose to put less on my plate than my eyes wanted me to because I have been overstuffing myself.  Turns out this was just the right amount (this is a salad plate, not a dinner plate).

6:00 tacos - zoodles, ground turkey, black beans, lettuce, tomato, cheese, guacamole, salsa
Raw cucumbers, carrots, bell peppers dipped in ranch dip (greek yogurt mixed with a ranch packet)

10:00 sf hot chocolate in milk

I'll be taking the time to make more turmeric capsules so I can swallow it instead of drink it.
This was gross.  But it was worth a try.

Late lunch with very messy asparagus. :-)  These tomatoes are like candy.

1:30 2 fried eggs, roasted sweet potatoes and mixed veggies, brown rice and quinoa, raw bell peppers, mushrooms, cucumber and tomatoes, 1 glass milk

6:00 Too full from lunch to eat dinner  Only ate 1/2 banana dipped in peanut butter, cup of hot postum/pero.

Day 3 Lemon water, Postum, and Cafe Rio

Shell got me started on this again.  Squeeze a half a lemon from my tree into 10 oz warm water.  Add stevia if you want.  Many health benefits (see below). Totally curbs my craving for Carnation Instant Breakfast, if nothing else.

9:00 fried egg on 1/2 Ezekiel English muffin
1 cup hot milk + pero & postum  It was cold this morning so I wanted a warm drink and this really hit the spot.

11:15 1/2 banana, handful raw almonds

Roasted veggies and sweet potatoes, fresh spinach, baby bell peppers and tomatoes
Quinoa & brown rice, black beans

5:30 1 grapefruit from my neighbor's tree (wow so good), spoonful of peanut butter

8:15 Cafe Rio tostada w/ shredded chicken, rice, black beans, guacamole, pico de gallo, lettuce, cilantro (no tostada shell, tortilla strips, or dressing), Diet Coke


I grew up on these drinks.  Lots of Sunday evenings, hours after a big dinner,
we'd eat cheese and jam on toast and drink hot Postum or Pero.
 I like them mixed in hot milk.

Choosing Balance

Inspired by Pey on Choosing_Balance on Instagram, I've been making healthier meals lately.  Here a few of my attempts.  This is before I started no-sugar/no-flour, so some of this does not work with that plan.
