April 22 Sweet Potato Toast


Lemon Water

Breakfast - Sweet Potato Toast.  SO GOOD.  Who knew?  Baked them on a rack yesterday on 400 for about 25-30 minutes.  Popped them in the toaster this morning.  Topped with: avocado, Trader Joe's Everything But The Bagel seasoning, plain Greek yogurt, warmed blackberries; strawberries for prettiness. :-)

Lemon Water
Breakfast - steel-cut oats, milk, yogurt, almonds, strawberries, cinnamon
Lunch - broccoli slaw sauteed for a bit and topped with salad topping; fried egg
sf peppermint patties.  The slaw is too bitter and I didn't enjoy it much.
Diet Coke at Bosa Donuts (on bike ride date with Jess)
Dinner - Leah calls it a Protein Bomb' -- ham & cheese baked in egg; 1/4th of an acorn squash; roasted carrots; grape tomatoes; Blackberries & sf hot chocolate for dessert

Some Meal Prep for the Week:

Carrots, brussels cut in half -
brushed with avocado oil, sprinkled with salt - 400 for 25 minutes

Acorn sqsuash, Sweet Potatoes sliced 1/4 inch thick,
brushed with avocado oil, added salt - 400 for 25 minutes
(I put the acorn squash back in the oven for 5-10 more minutes, I think.)

Lunch - tuna & cheese broiled on Ezekiel bread English muffin, sauteed zucchini & mushrooms seasoned with salt, pepper, garlic, nutritional yeast; spinach with apples & strawberries; grapes

Snack - sweet potato pancakes and strawberries
Dinner - roasted sweet potatoes, brussels, potatoes and mushrooms; spinach, 2 eggs
Hot chocolate


Dave's Breakfast - yogut, fruit, nuts, PB, chia, hemp
Lunch - tuna, yogurt ranch, avocado on toast; cauliflower
pizza, roasted carrot, roasted eggplant, spinach salad

Dinner - 2 eggs, roasted veggies, spinach, tomatoes

Dinner - salmon, baked sweet potato, spinach/fruit salad, cauliflower crust pizza
The rest of the family ate lazagana.  This was so good, I wasn't even jealous.

Breakfast - overnight oats (see recipe below)

Chocolate Peanut Butter Overnight Oats
Peanut butter banana toast, sweet potato pancakes, cutie
Chocolate Peanut Butter Overnight Oats
Layer in order:
1/2 cup old fashioned oats
1/2 cup milk (I used coconut milk because i was all out of regular)
2 T peanut butter
1/2 T cocoa powder
1/4 t vanilla
2 T large 60% cacao chips (this makes it sweet enough - no sugar or honey necessary)
2 T chopped nuts

Store in fridge overnight.  Stir, microwave for 30 seconds, top with bananas

Lunch - leftover Mongolian bbq, avocado, sf carnation with milk
Dinner 1. sweet potato pancakes, dave's breakfast with yogurt, chia, pear, hemp, peanut butter, and this new Daily Boost trail mix that's super good
Dinner 2. Gyudon (sugary so I didn't eat much) - rice, thin sliced beef, onions, soy-sugar-ginger sauce; clementines

April 6 - Ham Bone Chowder

Lemon water
Breakfast - leftover brown rice heated up with milk, peanut butter, pears, cinnamon, strawberries
Walk outside
Lunch - few sips of coconut water, santa fe salad (romaine, chicken, cheese, corn), ham bone soup
Dinner - Mongolian Barbecue - too many vegetables to name, chicken, pork, tiny bit of rice noodles, low-sugar curry sauce, garlic, sesame oil, ginger; diet pepsi
